Hamburger Style Meatloaf

When I was a kid, I refused to eat meatloaf.  I’d turn up my nose and push away my plate.  I called it white trash food, and to borrow lyrics from Sawyer Brown’s 1992 hit, Some Girls Do, “I ain’t first class, but I ain’t white trash.”

Ironically, I did enjoy Meatloaf’s music as a kid, although I preferred his somewhat lesser known songs, such as Objects in the Rearview Mirror May Appear Closer Than They Are, to the big hits.

After finally stepping down from the food pedestal I found myself on, I realized that there is a place for meatloaf on the menu, and my version is a burger (minus the cheese) style meatloaf, complete with ketchup and mustard.

In addition to my aversion to meatloaf (the food, not the singer), it also took me a really long time to ever use a crock pot.  Like, I hadn’t used one until this year.  It felt like cheating.

I recently tried making meatloaf in a crock pot, but I did not like the way it turned out.  Too dry.  Maybe I overcooked it, but regardless, I like my meatloaf better from the oven.  I use a crock pot to cook pot roast, though, and chalupas.  My god, CHALUPAS.

Anyway, while my taste in music remains the same (don’t judge solely based on the above two artists), two very important things have changed: I now eat (and have my very own recipe for) meatloaf, and I finally used a crock pot.

And hey, Two Out of Three Ain’t Bad

Hamburger Style Meatloaf

There are countless recipes for meatloaf out there. Mine incorporates much of what you would find in and on a burger.  I don't see any reason to make meatloaf too fancy, and these flavor combinations work really well with ground beef (or turkey). 

Ingredients
  

  • 1 ½ pounds 85/15 ground meat
  • 1 medium shallot grated
  • 1 large egg beaten
  • ¼ cup Panko breadcrumbs
  • 1 tablespoon worcestershire sauce
  • 1/3 cup ketchup
  • ¼ cup yellow mustard
  • Salt and pepper to taste

Instructions
 

  • Preheat Oven To 375 Degrees
  • In A Large Bowl, Mix Ground Beef, Grated Shallot, Beaten Egg, Panko, And Worcestershire Sauce.
  • Combine The Ketchup And Mustard In A Separate Bowl.
  • Add ½ Ketchup/Mustard Mixture To The Ground Beef Mixture, Reserve The Rest.
  • Add Salt And Pepper, To Taste.
  • Mix All Together And Form Loaf On A Baking Sheet.
  • Spoon Remaining Ketchup And Mustard Mixture Over Top Of The Loaf, As A Glaze.
  • Cook In Pre-Heated Oven For About 35-40 Minutes, Until Center Of Meat Is No Longer Pink.
  • Once The Meatloaf Has Reached The Desired Doneness, Slice And Serve.
